Frozen custard is a gourmet ice cream treat which first originated on Coney Island, New York, as a carnival treat at the turn of the previous century. To understand the reason for the great taste of Frozen Custard, the label of ingredients tells the entire story. Frozen Custard must contain at least 10% butterfat and 1.4% egg yolk. Traditional ice cream must only contain 10% butterfat. Typically, Frozen Custard is made daily and served at 18-19 degrees Farenheit. Traditional ice cream is made at 22-24 degrees Fahrenheit, flash frozen to -10 degrees Fahrenheit, and stored at -20 degress Fahrenheit.
During the manufacturing of ice cream. the volume can increase substantially in size by beating air into the mixture. The expansion of the product by introducing air is called "overrun." The volume of air and the size of the crystals can result in a coarse texture. Frozen Custard usually has about 20% overrun, a relatively low overrun percentage which results in a creamy, smooth texture.
Frozen Custard machines make "old fashioned" Frozen Custard. The machine continuously feeds custard mix into the freezing barrel. The mix is rapidly frozen, with low overrun and small ice crystals. The product is then dipped into a cone or tub, made into a sundae or shake and served to the customer. The custard produced is velvety smooth with a rich flavor. The Meadows Story
The Meadows Original Frozen Custard got its start in the summer of 1950 when J.V., Richard and Delbert Meadows opened a small custard stand in Duncansville, PA. Lines over fifty people deep formed immediately. It was an instant success and remains a great success to this day. Now considered a tourist attraction, the Duncansville location is still in operation and owned by Dick, Jay and Joel Meadows, sons of Delbert. Demand for the smooth, frozen treat has caused franchises to pop up, each individually owned and operated. Over fifty years later each Meadows location still serves the same recipe that got its start in 1950 and has kept our business successful for over fifty years.
